There is a period of two weeks where several of Tim’s family birthdays and anniversaries occur. When we were planning our wedding for good luck, we picked a date within the ‘FortNight’ that Tim’s mom, Pat, always cooked everyone’s favorite birthday meals. Since this dinner falls on February 2, which is Tim’s dad Darrell’s birthday, we thought we should do a nod to the Griffith traditions, with local ingredients.
Darrell and Pat are no longer with us, and we have been honoring them on our menus for years with the Griffith House Salad, and Pat’s tuna pasta salad.
When Mel’s birthday comes around in January we make her family’s pierogi, and Tim’s favorite scallop potatoes for him in March. Our loved ones continue to inspire us!
