We’re pleased to welcome spring back to northern Michigan as we celebrate the Spring Equinox, when daylight re-emerges and overtakes darkness on our daily clocks. This dinner is also a second attempt, as we had to postpone the March 16th dinner due to the blizzard! Ah, March – we Michiganders know anything can happen!

We’re pleased to welcome Chef Tero Valtonen back to Empire after his visit to back to his birth home of Helsinki, Finland. Tero enjoyed a couple months visiting his family, friends and homeland, and has returned renewed to cook and bake for you!

Join us for an early spring feast based on Finnish cultural knowledge of eating foods that can harvested or stored in the dark days of winter. This is the time that maple trees awaken and sap begins flowing to provide maple syrup. Soon this snow will melt, buds will begin swelling on the trees, and leeks, rhubarb, tulips and asparagus will begin emerging from the thawing ground!
